MALTEX® High Purity is a very dark brown, almost black malt extract. Malted barley which has been roasted and milled is extracted with hot water. The resulting liquor is filtered (mash filter) and boiled. The hot break resulting from boiling is removed by centrifugation. The extract is highly purified from non-colour matters, like proteins for example, by ultrafiltration. After ultrafiltration refinement, the extract is concentrated by vacuum evaporation. MALTEX® High Purity is a very pure malt extract which purity degree is expressed by a high ratio (EBC colour) / (solids content %). This malt extract is in high demand by those marketing their beer on an « additive free » platform. It is indeed an alternative to the use of Caramel as this natural product free of additives does not command an « E » number. MALTEX® High Purity is an excellent colouring medium preserving by its high purity the beer colloidal stability.

 The ratios Colour / Solids % and Colour / Proteins % reflect the purity degree of the colour matter of a malt extract to be used as colouring agent. These two ratios are essential to compare two commercial malt extracts in order to compare their ability to impart colour to a beer without altering its colloïdal stability. The best product as beer colouring agent will have the higher Colour / Solids % and Colour / Proteins % ratios.

  • MALTEX® High Purity complies with FAO/WHO JECFA and FCC recommanded specifications for « food grade » ingredients.

STORAGE STABILITY

  • In sealed containers, under cool (5-10°C) dry conditions : 6-12 months.
